I had spent about a month looking at rings and finally narrowed it down to three and told him to choose his favorite. I didn't know that he had picked it up on Friday so I wasn't really expecting the proposal for awhile. On Monday he said he was having a long day at work and just needed to get out of Provo (not unusual) and he wanted to go to a BBQ restaurant on Main Street in Park City that we love and have been talking about going to for a long time. We ate there on our first date :) So he picked me up and I started to get a little suspicious because he was really nervous.

When we got to the restaurant we were ignored by 4 different servers and it took 15 minutes before anyone came to get our drinks so I started thinking it was a set up... it wasn't, they just were not paying attention. So they brought us free cake, which again made me think he had set it up. When we finished dinner and left I thought he might have chickened out and decided not to do it. We walked around and looked in some galleries and antique stores then we got to a small side street that had trees c

overed in white lights and some fire places outside the restaurants and that is where he proposed! It was very sweet and it was just the two of us which is exactly what I would have done if I planned it!

At first he wasn't getting down on one knee and I blurted out "Get down, my dad says you have to be on one knee." He was a little surprised and so was I... but he did and I said yes, then cried. We even took a picture and you can see my face is wet and my mascara is a mess :) We'll be getting married in May at the San Diego temple!

This Girl is Almost a College Grad!

Last week I finished my final 2 classes for my undergraduate degree at Brigham Young University! I feel so fortunate to have been able to attend such a wonderful school and will always love it here. I have two finals to take and will continue to work on an internship until March 1st, which is when I will need to find a job :) Then it's graduation in April! Who would have thought it would take me 5 years, but time really seems to have flown by. One day you are a scared freshman trying to figure out how to find your classes on a huge campus and the next thing you know, Utah Valley is the most claustrophobic place you have ever been. Yes, sometimes I do want to run away and find a job in a big city but I think I will stay put for now.

I have really been blessed in the last six months to find a boy that I can't imagine ever living without. He's funny, smart, unpredictable and basically more than I could have dreamed him to be. I know that he sacrificed a promising internship to stay in Utah to be with me and it means to world to me that he loves me enough to not put our relationship to chance. I believe that in life you must be intentional. Meaning that if you have a goal, you need to take steps to get there, not let the world hand you what it wants. Having a purpose associated with each thing you do can make a huge difference. Especially in the relationships you have, whether romantic or not. In short I guess I'm saying that loving this boy makes me more excited than graduating college... which is saying a lot!

My quest for self-discipline starts soon....

The past semester has been one of my most stressful by far. I have had 18 credits worth of classes that all had heavy work loads. Many things in my life have suffered. Namely, my sleep schedule, my waistline, and my motivation. Now that I only have a few more finals, I can see the light at the end of the tunnel and I have decided I need to run for it. Thus I have made the rash decision to attempt a 28-day cleanse. I know, I know... It sounds stupid and it probably is. But the whole theory supporting it is to help regulate your body and put it back on track and help retrain your brain to stop using food as a fix-all. It's not a crazy juice cleanse where the only thing you consume is lemonade with cheyenne pepper (YUCK), it's whole foods with no dairy, meat or gluten. I plan on starting next Monday, and I'm going to follow it to a 'T.' All I really want to do is prove to myself that I am capable of making hard decisions and sticking to them!

I've never been on a diet and I'm not the type of person that it always obsessed with their weight. I like to stay active but how I feel is more important to me than those pesky numbers starring up at me. I love food and sometimes I don't care what it has in it. Other days I read the labels on my go-to-foods and realize that I'm getting absolutely nothing from them but chemicals, but dang those chemicals taste good! So starting Monday and for the next month, if you see me eating anything that I did not make in my own kitchen, steal it. And after I yell at you, I'll say thanks because you are a true friend.

To Whom It May Concern

Dear Taco Bell:

Today I decided to give you a second chance. I came in for the $.88 Crunch Wrap and it was anything but Supreme. Had I not gotten my beloved Baja Blast, you would have ruined my entire day

I thought the point of your new campaign was to convince me that your food is delicious, but under the limp lettuce, soggy chips, barely pink tomatoes and cheese sauce that was reminiscent of a broken glow stick, I could hardly taste the single ounce of meat. And while you claim it is 80% "real meat" the 20% secret recipe is the part that makes me nervous...

So thanks for nothing, except the Baja Blast.

Yours truly,

Nicole

P.S. We got my ticket about a month ago, but we still had a hard time finding one at a reasonable price because of the holidays but eventually we found this one. The only problem is that I have to change planes in Vegas. My flight only goes from Salt Lake City, UT to Ontario, CA! What would normally have been about an hour and a half flight has turned into an all day adventure... and the flight leaving the gate before mine is running late and it's just wonderful ;)

So what am I doing to keep my self entertained (ok well maybe not entertained, but at least less bored)? I am people watching, the great American pastime. Wait, you thought that was baseball? Sorry to break the news to you, but no one really lies baseball... But everyone loves watching other people. We do it more than anything else. We do it while sitting in meetings, classes, church, walking around the block, driving, waiting for the bus, you get the idea. It's a natural thing we do to stay safe and to keep our eyes busy.

Some people like to imagine what the people they see are thinking about. Others like to imagine that person is on some sort of fun trip or adventure maybe even guess where their final destination might be. But me, I think of one thing I could tell them that would make an impact on them. I'm probably wrong about most of them, but it helps me learn to look at myself from an outer position to see what I could learn from the way others view me.

For example, the girl across from me should know that staying within certain bounds when it comes to fashion will make style choices more pronounced and distinct... Black leggings don't mean your skirt can be 3 sizes too small.

I saw a woman earlier that had a child on a leash and he was running circles around her and when he ran out of leash, he would just drop to the ground and scream. To her I would say, when you learn to understand your child and your child understand what you expect from him, you will both have more respect for each other.

I guess where I'm going with this is that I like to feel that I could make a difference should I put forth the effort. In fact I think that everyone can do something truly wonderful if they can find their niche and just go for it. So what are you waiting for?
To the man who is 200 lbs. overweight and drinking a regular soda because "one diet soda isn't going to make me any thinner" (what I heard him say to his wife), I would say that it's never too late to change the way you live and eat. Even small changes can help, but giving up will never make anything better.

Busy, Busy, Busy; Run, Run, Run....

So lately I have been working on a thousand things at once. My classes aren't particularly hard, just lots of work and time required to get everything done. I have had tons of group projects the last few weeks and for those of you who know me, I'm more of a lone wolf when it comes to that kind of stuff cuz I know what I like and that's all i will tolerate ;) But I can see the end in sight! I don't have any more classes until after Thanksgiving break and then there are only 11 days before finals start! And with finals come a whole new set of problems... So for right now I am focusing on work today and then going home to the warm weather tomorrow for a whole week. It will be divine!

I let Kenady convince me to go see Harry Potter and the Deathly Hollows at midnight last night/this morning... We had free tickets so that's basically why I went. The movie didn't start until after 12:40 and it was 2 1/2 hours long! Needless to say, I didn't get in bed until way late and only got 4 hours of sleep before I had to get up and head to work. It's a good thing that I don't have to do manual labor, and it's an even better thing that I had a two liter of Dr. P in the fridge :)

On and because I'm sure you are dying to hear all about the movie ;) here's what I thought...

Beginning:
"OK, I sort of remember this stuff."

Middle:
"What the hell just happened?"

End:
"Wait, that's it? Do I really have to wait till next summer to see what happens... yeah probably going to forget by then."

I knew going into it that it would be a 2-part movie, but where they stopped it was stupid. You could at least resolve a couple of things to keep up audience moral...

Haha that sounded kind of bitter, I guess it's a really good thing that I have some time to relax! Happy Thanksgiving!

End of summer :(

OK, the official decision has come in... I am an awful blog keeper-upper. Yup keeper-upper is a word.

Well since my last post i have found a job (started in April), it's been great. I'm learning a ton and it's really flexible with my classes and other time conflicts. I have varying titles (based on the day). Some of which are Marketing Assistant, Customer Service Manager, and most recently... Grunt. But I'm basically a secretary/office manager...

Oh, I've developed what some call a "sick obsession" to the gym. It just makes me happy to be there and even happier to leave! It also doesn't help that I work for a weight loss company and read lots of articles and blogs in the health and fitness genre. I am now officially paranoid of chemicals in food and getting fat. I read a review of the book "Food Rules" by Michael Pollen and it scared me. He said that if normal people don't keep an ingredient on a label in their pantry then you definitely shouldn't eat it. And then he said something that makes sense but i hadn't ever thought about, if you eat it, it will be absorbed into your body and become a part of you! EW! Then I thought of all the crap I've ever eaten and I just about threw up!

I'm about to do it again, so new topic....

Classes start at the end of this month and I'm super excited to get back to school. I love working and all, but I need a break from sitting at a desk for 8 hours a day all summer. I've also realized that when I graduate college, I can't get a desk job somewhere... I'd rather be unemployed. I need something that will let me be creative. So I've been brain storming ideas of business that I can start. It's top secret so if I told you, well you know how that goes. ;)

Oh How Life Moves On

I know that another month has passed since i last updated, I told you I wasn't going to be very good at this! Life is just as crazy as always, but I love it that way. Nothing boring here... School is going well, I'm really enjoying my classes. I'm looking forward to taking more advertising classes, and possibly some P.R. classes next semester. Today was the half way mark for Fall semester and it seems like time has just flown out the window!

I'm loving my apartment and my roomies are just awesome. We all get along great and have a blast doing what ever comes up. I have been dating this amazing guy for almost a month, his name is Kyle and he's more fun than anyone I've ever met. I'm pretty sure I don't deserve him, but he seems to think I'm wrong ;) And in this case I don't mind being wrong as long as it keeps him around!

My dad is on his way to Iran tomorrow, he'll be gone for 3 weeks! Yeah, I think I'll go crazy this time too... It makes me nervous when he's so far away and I have no way to call him. I know he's excited to go back and see his family again, so that makes it better. Hopefully I'll be able to make the trip with him sometime soon. I think it would be nice to have a little more experience with the culture, and what better way then to get dropped in the middle of it?

I hope that everyone is doing well. I'll try to update sooner next time!

Loves, Nicole

The harder I try to hold on

So I realize that it's sort of been a long time, and I never finished writing about my trip. It was hard to find enough time to get on a computer and type up everything that was going on... Then when I got home and wanted to get everything up to date, my grandmother got sick and before we knew it, she had passed away and then I ended up in Provo only a few crazy days later. Yeah, I had a busy month! Now I'm all settled into my new apartment, complete with a freshly painted closet (which I am very proud of) and almost done with two weeks of school. Time is flying and the harder I try to hold on to it, the farther away it gets. I wish that I could stop it for one day just to try to catch up, not really counting on it ;) but it's a nice thought. I should be sleeping since I have a really busy day tomorrow, but for some reason I'd rather be doing this... not sure why, I don't really have anything specific to say.

Random thought of the day: Today I realized that I never think of my life as hard, ever. No matter what is going on, it's always been 'normal' for me. I think that is a gift the Lord has given me, to never see what my trials are while I am experiencing them. Otherwise I would be a crazy mess! I can look back now on past experiences and see how they have changed me and tested my faith, and that is what gives me strength. Seeing what I have done tells me what I can do in the future.

Paris, France

So, Amsterdam was surprisingly wonderful! The hotel was gorgeous, had an indoor pool, balcony, and an awesome free breakfast! The best so far. While we were in Amsterdam we went to the Anne Frank house, if you ever have the chance to visit, it's a must see! It is much larger than we expected, and more roomy too. We spent a lot of time just exploring the city and it was super pretty. I had heard lots of crazy things about that city, but it wasn't nearly as sketchy as it could have been.

After one night in the best hotel so far, we headed to Belgium. It was a sad day... But we still had fun on the trip. We stopped in Brugee and went shopping then finished the super long trip on the slowest bus ever to Brussels. In Brussels we ended up having Greek food and watched a little mini concert, and the next day we spent sight seeing. We saw some castles and stuff that no one has ever heard of, then we went back to the main square to watch the actual concert, which was so much fun! It was a national Flemish holiday and so they had lots of locals there.

Then we finally got to go to Paris!!! I wish you could all be here to see this beautiful city! The first night we got in at about 8 pm local time and spent the night climbing the Eiffel Tower and watching the lights on it sparkle every hour. The view from the top was awesome. The city just glows. The next day, probably Monday, we went and saw the Arc de Triumph, Notre Dame, Sacre Ceure, St. Chapel, Moulin Rouge, and Champ Ellyse. In the evening, the entire group took a boat tour on the river next to the Eiffel Tower and we had some amazing pics come from this trip! On Tuesday we went on a day trip to Normandy and it was incredible to see Utah and Omaha Beach. I had no idea that there had been so much destruction there. You can see where bombs had dropped and where cement bunkers had been turned into piles of pebbles. The monuments and cemetery for all of the American soldiers were very well done and created a very peaceful resting place for those 9,000 + brave soldiers. Last night was also incredible! When we got back from Normandy, we went over to the Eiffel Tower and watched the Bastille Day celebrations which included a light show and fireworks from the Eiffel Tower!!! It was the best fireworks show that I have ever seen. Probably a hundred times better than Disneyland's.

Today was one of my favorite days so far. We got up and had an appointment with the Bank of France and they gave us a tour of the bank's headquarters and we were really special apparently, because they took us into the meeting room of the bank's govenors!!! Only 3 groups get to tour the offices every year, they are never American, they never get to see some of the stuff we saw, and they usually have to be on a waiting list for 6 months! One of the guys in the group had some connections with his who set this visit up for us. After the bank we went to Versailles! How incredible! It's nothing like any of the pictures I have seen. The chateau itself was huge, the rooms were beautiful, but the best part was the gardens! We walked around for a while and took pictures, but then eventually we found a bike rental shop and took a ride around the grounds. They went on forever! We rode for over an hour and still barely saw any of it. Dad would be so jealous if he knew how gorgeous our ride was!!! Tonight we will be taking it easy and just grabbing dinner at a cafe since we are all so tired. In the morning we will head to Switzerland and spend a few days there, it should be fun and a little more relaxing than the big cities we've spent most of our time in. Hope everyone is doing well!

Loves, Nicole

London, England

The 4th of July was fun, not very traditional, but it was good. We were in Preston and we got to go to the temple to do baptisms for the dead. It was a great experience. Afterwards we went to dinner and then on Sunday I attended the Chorley 1st ward and afterwards we took our bus on a tour of the Ribble River and the house that Pres Hinkley lived when he served here and recieved the famous letter from his father that advised him to 'Forget yourself and go to work.' We also saw the home that the first missionaries to England lived in during the 1800's.

We got to London on the 6th after spending all day on the bus. We went to Stratford Upon Avon to see Shakespear's birth place and grave, and we also stopped at the Wedgwood Factory!!! I absolutly loved that one. I really enjoyed looking throught the museum, but the best part was the shopping! I found some really good deals on a few things for my apartment and I bought a necklace that was made there which will be a really neat keepsake. It will kind of be a pain carrying it all around but it's not very heavy.

Once we were in London, we checked into our hotel, and can I just say one thing? GROSS! Apparently there was a mistake with the kennedy Center (who was in charge of booking all of our rooms), and we ended up in a really sketchy hotel... The rooms are small even by London standards, the place is super old and creaky, some of the girls had a cockroach in their room, and our bedspread is like really stained and discusting. Pretty much everyone is appaled! But since we were already here, there was nothing else we could do. But our director was upset and so this hopefully won't happen again. Me and katie aren't even sleeping in the bed. We pulled off the cover and turned the top sheet over and are sleeping on that and covering ourselves with the airline blankets that we stole from our flight here. I am so glad I took it!!! It has really saved my life.

The first night in London, the 6th, we just hung out and had dinner then we went dancing and got up the next morning and saw Buckingham Palace, Westminster Abbey, the London Eye, and then when the rest of the group went off to see more stuff, I had to go back to the hotel because I wasn't feeling better and I wanted to go to see Les Miserables that night, so I needed to sleep it off. I felt much better after a few hours napping and then rejoined the group for the play. It was amazing! I've never seen it before and I was really impressed.

Today was our last day in London and we finished up doing the touristy things after we had our meeting with GMAC's insurance executive, Ron Judd. He graduated from BYU and has been living in the UK for 9 years. He is extremely successful and a really down-to-earth guy. Our meeting was like 2 hours but I could probably sat there for another 2 hours. After that we had lunch and went to the Bank of England's museum which had a lot of really cool stuff. They had some lottery tickets from the 1700's which were interesting and it was cool to see how their notes have changed over the years. A £1(one pound) note used to be the size of half a sheet of paper! Oh, and yesterday we also went to the National Gallery and saw some Picasso's, Monet's, van Gogh, and da Vinci. Then we went to the british Museum which is full of amazing artifacts from different civilizations. I spent some time in the Egypt room and in the Persian Empire room. But back to today, after the bank museum, we went to St. Paul's Cathedral, the tower bridge, and we went inside the Tower of London and saw the home of King Henry VIII. The crown jewels are also located there. They were stunning! I'd take any stone off of them and be a happy woman!

After a long day of walking, it was time for dinner and some shopping. So I ended up with two very cute tops for under £20! It's about 10:30 at night here and in the morning at about 4, we will be leaving this 'scum-of-all-the-earth'hotel and heading to the real sin city, Amsterdam. We will only be there for two nights and just long enough! Hopefully the hotel is nicer, becauseI think most of us are pretty nervouse about how trashy we have heard the city is, but I think we will do just fine! Anyways, I should get a few things done before I head to bed.

Loves,
Nicole

Edinburgh, Scotland

So, someone had the longest plane ride of their life!!! I had a 2 hour flight to Portland to meet up with Katie, then a 10 hour flight to Germany that was one of my least favorite experiences so far! Not only did we end up on a German airline, where everything and everyone were Germand, but our seats wern't together (we got that fixed), my little in seat t.v. didn't work very well, and everyone smelled and was drinking (which we couldn't fix!)... And by the end of this flight, we were both so tired, that we had the giggles which severly angered the mean lady across the isle... mean glares all around! After we got to Germany, we had a 4 hour lay over and then a 2 hour trip to Edinburgh which went fairly well. We took a cab to our B&B and then spent a few hours touring the "Royal Mile." Everything is so beautiful here! But when you're tired, it's hard to see. We did get to have a really cool experience climbing up to "Aurthur's Seat" to watch the sun set which was at 10:30! We were deffinitly glad to hit the sack. I had been up for over 36 hours!

Today we toured the Scottish Highlands on a tour bus. Again, it was so pretty, everything was the richest color of green and so lush. Unfortunatly we didn't get to see any Scottish Highland Cows, but that's ok because we got to see Sterling Castle... which had an absolutly beautiful view. I promise that I will try to post picks as soon as I can, it might be difficult because I don't have my computer, but I'll see what I can work out.

I hope you are all doing well. Yeah, you probably guessed right... it's ME! When you're trying to coordinate a flight with a second person and you both want specific things in a flight, sometimes you have to get up early. There seem to be dozens of things to do and I'm praying that I actually remember them! On the bright side I have some fun plans for the next few days! Tomorrow I'm meeting a friend from school, Karly, at a huge mall here in So. Cal. to finish picking up a few things and enjoy some girl time shopping! It's been weeks since I've been with friends... Oh the joys of being home for the summer! ;) And on Friday we're hitting the beach for her birthday! I've kind of been lacking on beach attendance considering that I've been home since May and this will be my first time out!

I finally got a definite itinerary for my trip, so I used a map and plotted out the cities I'll be visiting!
Anyways, I've just got to finish up a few more quizzes from the International Business textbook and I'm done with the pre-trip homework (finally)!

Baking fun!

So I figured it's about time for another post... This week has been rather busy so far (compared to the past few). I've started picking up the random little things that I need to take on my trip like extra hair pins, mini cans of hairspray, toothpaste, a power converter, dress pants... you know, all the fun stuff! ;) I've also started running over my packing plan to make sure that I eliminate all the things that I most likely wont need so that I have room to pack stuff I get while I'm there. I decided to go see Les Miserables with a group of people while I'm in London! I've never seen it, so that's pretty exciting.

This week has been full of good food too! On Sunday I made Matt and Dad their favorite cookies, and Tuesday Dad made Persian food. Tonight we had the missionaries over for dinner and I made chicken tacos with rice and beans. Then for dessert I used a new recipe to make some really fudgy brownies which were super rich, so I swirled in some lightly sweetened all natural peanut butter to almost made them healthy! These boys better miss me when I'm gone!

Birthday Weekend

So this past weekend I turned the big 2-0! It's a weird feeling... I think I'll just stay at 20 for a while. Besides, everyone always wishes they were 20 again, so if I just stay here then I'll never have to worry about it! I've never been a very big fan of birthdays because I hate planning a party for myself and so my family usually decides to do some sort of surprise. I've had about 6 or 7 "unplanned" parties in my life. But this year was great! No unexpected big deal party, I didn't have to get dressed up or deal with a bunch of people I didn't care to be with on my birthday. I just went to church, spent time with my dad and brother and got to talk to my friends on the phone. Dad made me a great dinner and I got to watch the first episode to the new season of The Next Food Network Star! Oh yeah and I got to eat cake! Honestly, nothing could have been better except maybe having my besties around, but they are all so far away... :( So talking to them was great!

I love having a break from school in the summer, but I really miss the lifestyle of college life. I'm really excited for my trip and to go back to school in the fall. I'm like in love with the apartment that I'll be moving into because it's unbelievably close to campus and not sharing a room anymore will be tons of fun! I want to decorate it really cute and I have a few fun ideas, but I'm waiting to hear back from the management company to see if there is any possibility for me to paint the walls. I doubt they will let me, but it's worth a try!!! I'll let you know how it goes!

Welcome

So this is my first blog EVER! I will never be one of those people that writes everyday about every little thing, but I'll try my best while I'm in Europe to include all the fun and important stuff! I'll also try my best to include pictures!!! But no promises... [I may not be able to figure it out ;) ]

Right now I'm just enjoying my time at home with Matt and Dad. Having family dinners and going to the movies together. Matt will be graduating from high school next week and as the family tradition follows, Grandma made Matt a quilt for graduation. But she hasn't been feeling very well lately, so today I finished working the edges and it's all ready to be wrapped for graduation!

I have my packing list all ready for my trip and I am working on making a list of things I want to see and do while in Europe, so if you think of anything, let me know!
